Dawn's Sponge cake base creates cakes with resilient texture and good absorption that are easy to roll. Perfect for making jelly rolls and tres leches.
Recipe:
1 cup of water
7 whole eggs
2lb sponge cake mix
Directions: Add all ingredients to mixer. Whip 1 minute in 1st speed (low). Scrape down. Whip 6 minutes on 3rd speed. Batter temp: 68 to 72 F. Bake at 350F for 30 minutes.
